    In real life, I won’t last a day on a juice cleanse. Trust me, I’ve tried.

    Numerous companies have sent me a pretty pennies worth of 3-day cleanses to “try out” and review. And, in an effort to put my best foot forward and try and relate to some of you (who shall remain nameless ?) who do enjoy an occasional juice cleanse I’ve said yes.

    A quick nutrition note. Your body does an amazing job all on its own thanks to our essential organs like our kidneys and liver to naturally detoxify itself! However, some people find that they have rejuvenated energy and are able to regain a sense of control when they stick with a temporarily juice diet. That’s why I’m sharing this with you today! For some of you this may not be for you, but for the others, I hope you’ll find peace knowing you can eat real foods while enjoying your temporary juicing days too! 

    Truth, I’ve failed, time and time again.

    But, when my colleague Megan Roosevelt came out with her latest book, The 5 Day Juicing Diet, and sent me a copy to review, I knew I had to share this gem with you. (Plus, Megan’s one of my #ttcsisters and she’s got a great series on her battle with fertility struggles here for those who follow me over on Bumps to Baby!)

    Ingredients

    • 1/2 cup cooked chickpeas
    • 1/2 medium avocado
    • 1/3 small lemon juice only
    • 1/4 teaspoon garlic powder
    • 1/8 teaspoon sea salt
    • 1/8 teaspoon black pepper
    • 1 Dave’s Killer Bread Epic Everything Bagel toasted
    • sriracha optional

    Instructions

    • In a small bowl, mash chickpeas using the backside of a fork for about 1 minute, or until a coarse puree is reached.
    • Add in the avocado and continue to mash together with the beans until smooth.
    • Stir in the lemon juice, garlic powder, salt and pepper.
    • Top each half of toasted Dave’s Killer Bread Epic Everything bagel with half the mashed chickpea avocado spread.
    • Garnish with sriracha if desired.

    Notes

    Note: If I’m having this as a snack, I’ll have one slice with a big cup of water. For a meal, I’ll pair half with a salad, or, eat the whole thing if I’m super hungry!

    Can you believe we’ve only been home 5 days and I’ve already created two cookie recipes (remember those White Chocolate Chestnut ones from Monday!)

    Let’s face it, I love to bake.

    To continue this baking quest, I had to test out the INFAMOUS Lunch Lady Sugar Cookies from one of my favorite cookbooks of 2017, Generations of Love and Food, by Meme Inge from Living Well Kitchen.

    Meme told me about her idea early last year to create a cookbook with Nan, her adorable grandmother who taught her how to live well in the kitchen!

    Boy oh boy am I glad Meme took the plunge and embarked on this labor of love. This hard back book is certainly worthy of any coffee table, and once you look inside you’ll see just why!

    Meme is from Alabama and her southern flare is apparent throughout the book! It’s charming, sweet and makes you just want to make a batch of her Lunch Lady Sugar Cookies, pour a cup of tea and sit down an chat with her and Nan.

    Honestly I was inspired to make these given that the Snowball Cookies are one of the fondest memories I have with my grandma.

    Since Meme and my grandma both love/loved their tea, I decided to make a twist on these to make them a little more like a brown sugar tea cookie.

    Regardless if you try these or not, you need to do two things:

    Brown Sugar Tea Cookies

    Brown Sugar Tea Cookies – the perfect bite sized treat to enjoy this holiday season!

    Ingredients

    • 4 tablespoons unsalted butter
    • 1/3 cup vegetable oil
    • 1/2 cup brown sugar
    • 1/3 cup sugar I used stevia
    • 1 teaspoon vanilla extract
    • 2 cups whole wheat white flour
    • 1 teaspoon cornstarch
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon kosher salt

    Instructions

    • In the bowl of an electric mixer, add butter, vegetable oil, brown sugar, sugar, and vanilla. Mix with the paddle attachment for about 1 minute.
    • To a medium bowl, sift together the flour, cornstarch, baking powder and salt.
    • Add in the dry mixture 1/2 cup at a time, scrapping down sides as needed. Mix until dough is uniformly combined.
    • Remove dough from bowl and wrap in Saran Wrap and place in the refrigerator for 30 minutes.
    • When ready to bake, preheat oven to 350 degrees F.
    • Remove dough from the refrigerator. Spray 2 baking sheets with cooking spray and begin to drop dough by the teaspoon 2 inches apart on the sheet. Press down lightly with the back of a fork on each cookie.
    • Bake for 10-12 minutes, tops should be golden brown but soft to touch.
    • Remove and let cool 5 minutes.
    • Enjoy!

    When’s the last time you had a chestnut?

    I’m willing to bet, a majority of you are shaking your head… NEVER!

    Well, as of this past Switzerland excursion, I am no longer a virgin to the chestnut. And, friends, I’m actually a huge fan!

    Roasted chestnuts have a slightly sweet taste IMHO, and make the perfect addition to salads, vegetables and sweet treats, like cookies!

    Truth be told, the entire time we were out in Europe Mr.CEO kept asking me to make chocolate chestnut cookies but after being shuffled around so often, I had little motivation to cook in the 3 days we found a place with a kitchen in December.

    So, as soon as we got home, I naturally had to get creative in the kitchen and come up with something for him.

    Enter, White Chocolate Chestnut Cookie with Gingerbread House Ice Cream!

    I had to create a bite-sized treat that would satisfy his craving for cookies and my craving for Halo Top. A winning combination if you ask me!

    White Chocolate Chestnut Cookie Sandwiches

    Ingredients

    • 4 tablespoons unsalted butter
    • 1 large egg
    • 2 teaspoons vanilla extract
    • 1/3 cup sugar*
    • 1/4 cup packed brown sugar
    • 1 1/2 cups white whole wheat flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup white chocolate chips
    • 10 roasted chestnuts coarsely chopped
    • 2 pints Halo Top Gingerbread House Ice Cream*
    • 1/3 cup candied chestnuts chopped (optional)
    • red and green candies optional

    Instructions

    • Preheat oven to 350 degrees Fahrenheit. To the bowl of your electric mixer add butter, egg, vanilla extract and sugars. Beat on low speed for 1 to 2 minutes. Add in the flour, baking powder and salt, continue to beat 2 to 3 minutes, or until all ingredients uniformly combined. Add in the white chocolate chips and chopped roasted chestnuts, beating tougher on low one final time until chocolate and chestnuts evenly dispersed.
    • Spray two baking sheets with cooking spray. Using a 1-ounce scoop spoon cookie dough onto the baking sheets, leaving 2-inches between cookies and the side of the pan. Use the back side of a fork to gently push down on each cookie to slightly flatten.
    • Bake for 12-15 minutes, cookies should be golden brown on top when done. Remove and let cool on baking sheet before removing them.
    • When ready to prepare sandwiches, remove Halo Top Gingerbread House Ice Cream from the freezer. Using the 1-ounce scoop, portion ice cream on to the top of one cookie. Press another cookie on top of the ice cream. Garnish with optional candied chestnuts or chocolate on the sides of the sandwich. Repeat until all ice cream sandwiches have been assembled.
    • Freeze remaining ice cream sandwiches in an airtight container wrapped individual in plastic wrap for up to 1 month for best consistency.
    • Notes:
    • * Any type of sugar will work, I used stevia in this recipe. Can't find Halo Top's Gingerbread House flavor? Switch up and use a Vanilla Bean instead!

    This view… remarkable right?

    Just a Saturday morning in the lovely town of Tübingen, Germany. While I don’t miss the chilly winters of Chicago, the snow capped mountain views are simply stunning!

    Friday turned out to be a holiday here in Switzerland so Mr. CEO took one of his last vacation days so we could head out early to head up towards Germany. Well, our goal was to leave early but then on an early morning walk I saw our town was hosting a Christmas market so we decided to stay until 10am when it opened and check it out.

    Well, while I’m glad we got some extra steps in, the market here was a bit rainy and not all the vendors were out. So, a tad disappointing considering because we waited those extra 3 hours we hit a TON of traffic heading up to Germany.

    Lesson learned, get on the road!

    Any who, once we finally made it into Germany, it was just what we had imagined!

    Literally, a Christmas Mecca!  Corner around corner lined with little carts selling everything from brats, to cider, to mulled wine and the cutest Christmas ornaments!

    I’m not a fan of the hot wine, but Mr. CEO was a trooper and enjoyed the glass of Gluhwein for the both of us! I did obviously have to snap a picture with it too though!

    How cool is the Advent calendar window on the building behind me? Truly every little Christmas magical piece they could incorporate, Stuttgart’s market did!

    And of course we got a brat to share! While I’m not a fan of pork usually, I couldn’t go to Germany without trying some! It was delicious, and very filling!

    While I did try this, it wasn’t my favorite. But, Mr. CEO, in love!!

    What is it exactly? Well, it’s a mix of sauerkraut, bacon and pasta like noodles.

    Words of wisdom – be sure to make sure you have Euros before you go there! We forgot to exchange our Franks and had to find an ATM (which was very challenging) to withdraw money so we didn’t have to window shop only!

    Yes, those are icicles hanging from the beautiful waterfall we hiked to this past Sunday. It was surreal, beautiful and freezing all in one!

    We started at base in the town of Foroglio and hiked 2600 feet up to the top! It was cold, we saw some wild goats, and all in all, had a lovely time!

    Hello friends!

    Back with another weekly update of the Life Lately, Swiss Style!

    The last month has really flown by IMHO (in my humble opinion), does anyone else feel like that?

    I think when the holidays approach and everything turns towards Turkey Day and Christmas there’s really not even a chance to blink!

    Though I won’t be cooking this year, Thanksgiving is going to be a very fun adventure for Mr. CEO and I. Given that he is on the USA holiday schedule, he’s got a full three days off this week. Thus, we’re backing up our Audi, his work car – station wagon- that we’re fortunate enough to drive around, and heading out to explore the French Alps, Zermatt and the infamous Interlaken hiking region!

    But, before we head out, I want to share a few fun memories of the past week!

    First things first, we were invited to share, raclette, a traditional Swiss meal of cheese and potatoes, at Mr. CEO’s colleague’s Tiz’s home. It was such a lovely evening! I didn’t want to be the crazy American taking photos, so I didn’t at first. But, then Jana, Tiz’s wife, said it was a-okay!

    So, the above is a photo from a free site so you can see the set-up, and below is the photo I snapped of my melty gooey cheese! It was delicious and so filling.

    What I loved most about raclette is that it’s slow paced, meaning it’s a great way to dine with guests and really get to carry on a conversation. Plus, it’s all individualized and you can easily add veggies to grill on the top, too.

    And a final bonus, the dinner concluded with my new favorite after dinner “digestive” drink, a ginger liquor. I may or may not have had two shots (but sipped) of this!

    I’m still in awe of the magical beauty of the Verzasca Valley. It truly is one of the most breathtaking places I’ve ever seen, and lucky for us is a short 30 minute drive away.

    You may remember we headed there on our last visit here in June too, full post here! 

    We started off hike #49 of my 52 week challenge visiting the Hamlet of Corippo, or the iconic landmark of the Verzasca Valley that still resembles most closely the original architecture of the area.

    It was a stunning view and such a picturesque town!

    From there, we headed back towards the last town in the Verzasca Valley, Sonogno. It was a bit chilly and I definitely didn’t wear enough layers, so instead of our usual 5-6 mile hike, we kept this one at about 3 miles but it was still so worth it!

    Unbeknownst to us when we started out, we found the most magical waterfall we’d ever seen just a short 1.5 miles back into the town’s hills.

    And, naturally, because they’re was a bridge we had to cross to get up close and personal with the waterfall, Mr. CEO took his mandatory bridge photo!

    All in all, it was a fabulous weekend and we enjoyed every second of it! And of yes, one of my other highlights, getting a solo moment on the kiddie trampoline in the park as we headed to the gym Saturday morning!

    From there, we headed back towards the last town in the Verzasca Valley, Sonogno. It was a bit chilly and I definitely didn't wear enough layers, so instead of our usual 5-6 mile hike, we kept this one at about 3 miles but it was still so worth it!

    Are you team Parmesan Polenta or traditional?

    While I’m a traditionalist at heart, I am definitely a fan of a little cheese in my life!

    Parmesan Polenta is really creamy, it’s super comforting and most importantly, it’s so easy to make!

    Whether you have to feed a crowd or just yourself, this recipe is one that will appease all the tummies and make everyone TEAM POLENTA!

    Is polenta really that easy to make?

    I swear, it is.

    It all depends on the type of consistency you want. I prefer a creamy when its hot then firms up when it cools.

    The plus of this is that when polenta hardens you can easily whip up these Polenta Fries!

    Most recipes you will find online require hours of cooking. I tried both ways, and honestly, couldn’t taste a tremendous difference!

    Plus, I’m fairly certain if you are here on the Simple Swaps website, you’re looking to swap some sanity and time!

    Where can I find the ingredients at my market?

    While polenta is actually a dish, the main ingredient (aka only ingredient in most) is finely ground yellow corn.

    It’s texture to me is like a mix between grits and oats, but the flavor is 100% corn.

    Someone pinch me because I’m still dreaming about this view we saw over the weekend in the hills of the Centovalli!

    But, let’s rewind a little bit so I can catch you up on the past week since the first revisit of the Life Lately series (you can find that here) now that we’re back in Switzerland! (And, more on that transition here in case you’re just joining the Simple Swaps community.)

    We started off the weekend before last hitting up a hockey game, Swiss style!

    One of Mr. CEO’s colleagues out here is a hockey fan too, so he was super excited when he heard us Americans were up to venture out to a game with him. While most regions in Switzerland have only one team, we learned at this game that the canton of Ticino that we currently live in has two, aka, they’re arch rivals!

    It was a very interesting game (being it was my first professional hockey game IRL (in real life) that I had ever seen. I really enjoyed it, almost more so than football! I think it was the fist fight we saw break out on the floor, or the random car that came on the ice and started doing donuts during half time!

    Of course we were both excited to see what sort of FOOD they would serve at their games. #sorrynotsorry, we do love to eat!

    And, lucky for us, we were both pleasantly pleased. Now, unlike the USA NHL, this was more like a minor league as far as the appearance of the stadium and the amount of sponsorship present (nope, they’re was no McDonalds on site!)

    We did manage to snag a bag of roasted and spiced almonds. Yes, I did enjoy every last one of them. Portion control, what’s that?! #simpleswapfail

    And Mr. CEO’s pal introduced us to maronni’s, or as we know them in the states, chestnuts, which he really enjoyed!

    We spent the following week working, or Wayne working and me attempting to work and study for my CPT exam. It’s tough when he’s gone from 7am to 7pm most days, but, I’m getting in a grove this week (FINALLY) and really enjoying the time I’ve got to work on some of the things I’ve wanted to for myself.

    But, I’m not going to lie, I look forward so much to Friday night’s when he gets home and we have the entire weekend to play! This past weekend we decided to explore Lucerne Saturday and then hike Sunday.

    Lucerne is a breathtaking city about a 2 to 3 hour drive from where we are down in Locarno. It was well worth the trip and the insanely long tunnel we drove though known as the Gotthard Tunnel that is 17 KM long! This tunnel is nuts, seriously.

    Anyways, enough about the tunnel! Once we got to Lucerne, we parked in a covered parking lot that was about 1/4 a price of the train station lot. Word to the wise, if you want to travel on a budget, do that! It was about 10 franks to park for 4 hours.

    We didn’t really have an agenda, that’s one thing we promised ourselves we would enjoy this time. No agenda, no plans, just go with the wind. And we did just that. A few hours wondering around the town and visiting every little market on the waterfront. The flavors of fresh pastas they sold and fresh veggies were unreal!

    And, not to mention catching this view of the picturesque bridge was simply amazing.

    Mr. CEO has an infatuation with bridges, so naturally I had to take his picture on it too!

    We grabbed lunch on the waterfront at the Rathaus Brauerei, and it was seriously fantastic. We were both hesitant thinking it would be a tourist trap, but after wondering about 2 miles out of the way (in the rain) and realizing nothing else was open, settled on this and were SO GLAD we did!

    After our late lunch we headed back and by 7pm were watching Christmas movies on the tablet in bed… #oldatheart!

    Sunday was a fun filled day marking hike #48 of the 52 Week Hike Challenge I’ve been on this year. We headed south about 30 minutes from our apartment to the Centovalli and it was simply incredible.

    3500 feet above sea level and the most incredible hike I’ve ever been on in my life. Not only did we see waterfalls, but also found tons of empty maronni shells that people gather to sell on the street markets!

    Mushroom Turkey Burger

    This super simple yet flavorful burger is the perfect way to embrace the plant-forward way of eating this year!

    Ingredients

    • 5 ounces white button or cremini mushrooms, trimmed
    • 2 ½ ounces onion
    • 2 cloves garlic minced
    • 2 teaspoons dried oregano
    • 1 teaspoon black pepper
    • ½ teaspoon kosher salt
    • 1 pound lean ground turkey
    • 6 whole wheat hamburger bunsGF
    • 6 romaine leaves
    • 6 ¼- inch tomato slices
    • 6 small red onion slices
    • 2 tablespoons Tzatziki Sauce

    Instructions

    • Finely dice mushrooms and onions and add to a large bowl along with the minced garlic, oregano, black pepper, and salt. Stir to combine. Mix in the ground turkey then fold in the breadcrumbs and egg, mixing gently until incorporated. Form into 6 patties, roughly 4 ½ ounces each.
    • To cook on the stove top:
    • Set a large nonstick skillet over medium heat and spray with cooking spray. Place burger patties on skillet and cook 5 to 7 minutes per side, or until internal temperature reaches 165°F.
    • To cook in the oven:
    • Preheat oven to 375°F. Place burger patties on a baking sheet lined with parchment paper and bake for 20 to 25 minutes, flipping halfway through cooking. Remove when internal temperature reaches 165°F.
    • Serve burgers on whole wheat buns topped with leaf lettuce, tomato, red onion, and sauce of choice, we recommend Tzatziki.

    Life Lately – Back in the Swiss Alps

    Alright so call my bluff, the above photo was actually taken on Lake Como in Italy but our little humble abode for the next two months is actually just an hour north on the Italian/Switzerland border.

    The last few months have been a bit of what I would say a rollercoaster. I use that analogy a lot but it’s true, I feel like we were going 100 miles an hour through June, July, and August that when I finally took a moment to breathe, it hurt.

    Emotions came up and I just felt like I couldn’t go there, I didn’t want to process the disappointment and pain of yet another failed attempt on welcoming motherhood. So, I didn’t.

    I buried myself in an ebook for a client and focused all my attention on my work. It was easy to do and gave me no excuse to process the pain and hurt I felt.

    But, that sort of busyness can only last for so long until you need to stop and smell the roses.

    Well my friends, that is exactly what I’m doing out here now with our little Life Lately – Back in the Swiss Alps!

    I actually sleep in to until GASP… 7am! It’s a miracle for me and I’m loving every second of it.

    I eat breakfast…slowly, actually tasting the yogurt I’m putting in my mouth rather than in front of my TV or computer trying to catch up on who’s doing what now.

    I take a mile walk to the gym, workout for as long as I want, and slowly stroll back home.

    I walk to go shopping for our groceries less than a 1/4 mile from our apartment. And, for the first time in I can’t tell you how long, I’m eating when I’m hungry and stopping when I’m full, without focusing on the calorie content of x,y, or z.

    And, I’ve made the most amazingly delicious soups I’ve ever had in my life. (Coming soon, I promise! But in the meantime feel free to check out the Sweet Potato Chili here or the Vegan Squash Stew here!)

    But, I’m working too, I swear!

    A huge eye opening experience was when Mr. CEO asked me to really take this time while I was out here to focus on those things that bring me joy. He asked me to evaluate all my contracts and only maintain the ones that I felt excited about and that in turn truly valued my expertise.

    So, I’m doing just that. I’m writing for my national outlets about topics that I love! I’m working with colleagues on a few exciting new projects for 2018, consulting with a few brands and I’m learning to live a little less rigid in my structure.

    Also, I’m really excited to announce I signed up and just began my coursework to become a personal trainer!

    This is something I’ve had on my bucket list to do since 2014 and never felt I was “trainer-esque” enough in my body for people to ever take me seriously. But, I realized a size 0 or size 6, I’m still strong and want to learn as much as I can to help spread the knowledge on nutrition and fitness to all of you lovely people!

    And that is it my friends! My Life Lately – Back in the Swiss Alps! With the added excitement of weekend exploring with Mr. CEO to Valle Maggia and the other fabulous mountains of the Swiss landscape. Oh, and of course, my daily excursion to the various ALDI’s and Lidl’s around the Locarno region lol!

    Well, that’s absolutely NOT at all how I feel! Sorry Joey, I love you, but let’s bring on 30!

    Truth be told, I’m one of those souls who was 13 going on 30. Maybe it’s because at the prime age of 13 when I was recovering from anorexia nervosa I knew right then and there what my career path was in life.

    I was going to be an RDN and help people rediscover the joy of eating foods they love and that in return, nourish their body. 

    Flash forward the 17 years to today.

    I think over the years my definition of “joyful eating” has changed and evolved every year, with some years (typically during the ones I was in school still and learning day in and day out about the metabolic effects of the foods we eat) leaning towards more of a restrictive mindset.

    I’m not proud to admit it, but as I sit back and think about the last decade, I can see how that has unfolded. I’m proud to say as I enter this new decade I’ve learned to embrace many things I wish I only knew at the start of my 20s!

    1. DGAF – Seriously, this stands for Don’t Give a F*ck.

    I’m starting with this one because I’m a people pleaser who more often than not cares more about others than myself. I wish I remembered that most people don’t spend half the time stressing over a situation that I would lose sleep over. No, I’m not saying I’m not going to be the compassionate person you’ve come to know, but I do plan to give myself a little more time and attention, too.

    2.  Your weight or size does not dictate your happiness. 

    I thought fitting into my “old clothes” I worn on my 21st birthday or weighing 130 pounds on my 30th birthday was going to be the key to total happiness. Over the last few weeks, I’ve come to realize an important lesson that I only wish I knew years ago,

    My weight does not dictate my happiness.

    Those who truly care about me, love me and know my credibility won’t disown me because of a few extra pounds or a bigger size. And, for those who do, they weren’t worth my energy anyways.

    3. Not everyone is your best friend, and that’s okay. 

    I wear my heart on my sleeve. You all know that.

    But, I’ve come to realize in the last year that people will come in and out of your life and there’s a reason for that. They were put there to help you through a specific time or learn a valuable lesson, not to be your life long pal. It’s with many tears shed and sleepless nights I’m learning this, but as my dad always taught me, you’ll be lucky when your 30 if you have 5 friends you can count on through thick and thin. Wise words pops, I truly understand the lesson there now.

    4. You can’t plan everything. Embrace the beauty of the unknown. 

    I got married at 24, moved into our house near the top school district at 25 and put our name on the wait list for the family community pool that has a two year waiting list nearly 5 years ago. Guess what, we still haven’t signed up for the pool because we’re still waiting on the baby to bring to that pool.

    Why haven’t I just signed us up for a family of two? No more waiting on the possibility of tomorrow, we are a proud family of two and until our brood expands, we will embrace the beauty of our unconditional love in our little family.

    5. Pursue things that bring you joy. You can do anything, never give up.

    I said at 15 years old I wanted to write a book. I didn’t know on what, but knew that was in my future. As I turn 30 in just 10 hours and the release of my first book co-authored with a dear friend is just 4 days away, I know that without question anything is possible. I’m not sure what the future has in store for me, but I know there’s a special place in my heart that makes me want to take the community of Bumps to Baby to a whole new level.

    A TED talk, a conference for women, who knows. But, big things are on the horizon. 

    6. You can always make more money. Don’t put yourself in a position that could jeopardize your name. 

    I used to get a stomach ache as a kid when I would eat 2 cookies instead of the 1 my mom said I could have. No, not because of the sugar, but because I’d feel guilty that I had gone against what was “right”. As the nature of the beast of self-employment in the nutrition communications field continues to evolve, one thing I’m blessed to have realized these past two years is that I can always make more money but I can’t get back my name.

    Point being, I will never put my John Hancock on a contract that may fund my next IVF cycle but give me a queasy feeling in my stomach.

    While I’m sure this list will continue to expand as I dive into my 30s, I’m blessed to have a handful of friends and family I can count on to continue to inspire me to live the best life yet.

    This month marks the one year anniversary of my sweet Grandma’s passing.

    Point being, though she has passed, there is not a moment that goes by that I’m not thinking of her.

    And, lucky for me, my mother happens to have so many of the same qualities I adored in my Grandma!

    But, unlike sweet Grandma, my mom has taken a keen interest in her health so she can live a strong and healthy life, hopefully bypassing some of the conditions my Grandma developed because of her poor dietary choices and lack of inactivity throughout the better part of her life. Don’t worry Grandma, I love every piece of you, even your mayonnaise sandwiches and ice cream BID!

    To help my mom (and of course, you too), I am delighted to introduce you to fellow dietitian Chris Rosenbloom, PhD, RDN, FAND, author of Food & Fitness After 50!

    As we age, we need to make a few tweaks to our diet to be our best. We need fewer calories to maintain our weight, yet we need more protein to maintain and build muscle (yes, we can build muscle even at advanced ages with strength training and good nutrition).  No matter how you eat, there are 4 considerations that all older adults should use as the foundation for healthy aging:

    • Inclusion of all three energy-containing nutrients (carbohydrate, protein, and fat)
    • A focus on nutrient-rich foods
    • A concern for chronic disease risk
    • Enjoyment of eating and mealtime

    Many of us pay attention to the 4th bullet more than the other 3! Here are some simple swaps to focus on nutrient-rich foods at every meal and snack while keeping calories in check.

    Breakfast Swaps

    If your usual breakfast is toast and coffee, jazz it up with more protein and healthy fats to keep you going until lunch time. I’m always amused when people tell me that if they eat breakfast, they get hungry by lunchtime. Feeling hunger is normal and is your body’s way of telling you to eat! Here are 2 sample breakfast meals that are healthy and delicious.

    #1. Whole grain toast topped with half an avocado topped with a poached egg. Avocado contains healthy unsaturated fat and is also rich the nutrient lutein (and so is the egg yolk so the 2 foods together are a power couple). Older women who have higher blood levels of lutein have better cognitive function.

    #2. 1 cup of reduced fat cottage cheese with berries (or any fresh fruit in season). Cottage cheese is a protein and calcium powerhouse and colorful fruits provide fiber, vitamins, minerals, and plant compounds called phytonutrients for good health.

    Lunch Swaps

    If your usual lunch is a green salad, try something more substantial to keep you going until dinner.

    #3. Cup of tomato basil soup and grilled Swiss cheese sandwich on whole wheat bread. No need to shun bread as we age; choose a variety of whole grain breads for B-vitamins and fiber.

    #4. Leftover green salad rolled into a small flour tortilla with grilled chicken strips or turkey breast. Pile on the veggies by adding bell peppers, banana peppers, diced tomato, and sliced cucumber.

    Dinner Swaps

    Most of us eat our heaviest meal at dinner; 60% of protein is usually consumed at dinner. If you’ve been eating protein for breakfast and lunch, scale back on protein at dinner and swap a big protein portion with more veggies and whole grains.

    #5. 3-4 ounces of grilled salmon with whole wheat couscous and grilled veggies (asparagus, broccoli, or whatever you like). If you don’t like salmon, try a milder fish like tilapia, rich in protein but not as good a source of omega-3 fats as salmon.

    #6. Grilled flatbread margarita pizza with fresh mozzarella cheese, diced tomatoes, and fresh basil. Add dark greens salad for more nutrients.

    Snacks

    Instead of chips and sweets, try some healthier options such as:

    #7. Fresh fruit; don’t worry about the sugar in fruit. The sugar is naturally occurring and comes with lots of water and vitamins and minerals.

    #8. If you want something sweeter, try a one-crust fruit pie loaded with berries, apples, or peaches topped with vanilla Greek yogurt.

    #9. Popcorn; yes popcorn is a whole grain. Drizzle with olive oil and sprinkle with Parmesan cheese for a protein and calcium addition.

    Ingredients

    • 15 ounces canned white beans rinsed and drained
    • 1/4 cup sunflower seed spread or peanut butter
    • 5 tablespoons maple syrup
    • 2 teaspoons pure vanilla extract
    • 3/4 teaspoon ground cinnamon
    • 1/4 teaspoon kosher salt
    • 5 ounces Greek yogurt
    • 2 tablespoons sunflower seeds roasted and salted (optional garnish)
    • 2 tablespoons mini chocolate chips optional garnish
    • 2 medium green apples sliced
    • Assorted crackers and cookies optional serving

    Instructions

    • To a food processor fitted with a metal blade, add white beans, SunButter, maple syrup, vanilla extract, cinnamon and salt. Pulse for 20 seconds.
    • Remove lid and whip down sides with spatula; add in Greek yogurt. Pulse remaining 10 seconds or until smooth and uniformly combined.
    • Spoon into bowl and serve with sliced apples and assorted crackers and cookies.
    • Store in an airtight container in the refrigerator, use within 3 to 5 days.

    Yep, case and point, not all “berries” are created equal, they even have their own personalities!

    • They contain twice the antioxidant capacity of traditional blueberries on the market.
    • They’re half the size of most blueberries, but, they pack a mighty punch!
    • In most markets (unless if you live in Maine, of course!) you’ll find them in the freezer section labeled as “Wild Blueberries”. Since they’re grown in their natural habitat in Maine and Canada, they won’t make it out West in tip top shape without being flash frozen.
    • They taste INCREDIBLE!

    For those who don’t have a heck of a lot of time, you’ll enjoy the #shawkitchen hack I used here… a boxed blueberry muffin mix!

    In fact, I used the Kodiak Cakes latest whole grain Blueberry Lemon Mix and amped up the nutrition with a cup full of those delicious wild blueberries and a zesty lemon frosting. While I haven’t tried this with other brands, I would recommend using a 14 ounce container of a similar whole grain muffin mix for added nutrition!

    Ingredients

    • 14 ounce box whole grain blueberry muffin mix
    • 2 large eggs
    • 1 cup low fat milk
    • 2 tablespoons plant based butter melted
    • 1 cup frozen wild blueberries
    • 2 tablespoons whipped low fat cream cheese
    • 2 tablespoons nonfat plain Greek yogurt
    • 1 tablespoons lemon juice
    • 1 teaspoon vanilla extract
    • 1 teaspoon lemon zest

    Instructions

    • Preheat oven to the 375 degrees F and spray a bundt cake pan with cooking spray.
    • Mix muffin mix and eggs in a large bowl. Add in milk and melted butter, continue to stir.
    • Fold in wild blueberries and pour into bundt cake pan. Set oven timer for 40 minutes and let bake.
    • While baking, make the frosting.
    • Place cream cheese, yogurt, lemon juice, and vanilla extract in a mini bowl. Mix vigorously together for 1 to 2 minutes using a spatula. Add in lemon zest and mix one final time, set aside.
    • When cake is done (usually between 40 to 45 minutes), remove from oven and let cool on a wired rack before taking out of the pan.
    • Frost when cooled and enjoy!
    • Store extra cake in the refrigerator. Consume within 5 days for best taste.

    If you’re looking for a thorough, unbiased review of the safety of fruits and vegetables this post is for you. Through demystifying the produce aisle I hope you will feel safe and secure about what you are feeding your family.

    Would you believe me if I told you 20,000 cancer cases could be prevented annually if half of all Americans added one more serving of fruits and veggies to their daily diet? 

    How about that only 1 in 10 Americans eat enough fruits and vegetables a day?(2) 

    Perhaps the second is not as alarming as the first, but truth be told both are valid points.

    And, the reason so many people likely are confused by the produce patch friends is the mixed messaging that the media presents as to what is the BEST version of fruits and vegetables to purchase.

    It breaks my heart seeing the research that demonstrates consumers are so confused by the labeling surrounding non-gmo, organic, pesticide free, hormone free, natural, clean, etc. that they often forgo the nutrient rich fruits and vegetables and opt for a packaged item instead.

    What are the best fruits and vegetables to choose in the produce aisle?

    While I’m all about convenience, I would NEVER say choose a bag of kale flavored chips instead of fresh kale on the reg.

    And no, a bag of kale flavored chips does NOT count towards your servings of veggies that day, sorry to break it to you.

    The best produce picks are the ones you will eat!

    If that means you need to buy a processed (aka prepared, remember the post here!) bag of lettuce or Brussel sprouts that have been pre-washed and cut, then great!

    If you have time to do the leg work yourself, awesome.

    The point is, you can feel safe and secure choosing ALL and ANY of the produce that you find at your local market. Pinky promise!

    Let’s get to the facts first, ok? I’m betting some of you are going to need a little more evidence.

    Prove to me produce is safe to eat, please!

    While there are many things that go into making produce safe to consume, from the farm to your table, here are some of the major points I want to address.

    • Pesticide residues are so low on produce that a child could eat 100’s to 1000’s of servings a day and not have any health effect from residues.

    • USDA data shows pesticide residues on foods tested are at levels below the tolerances established by the EPA (Environmental Protection Agency) and pose no safety concern.

    • Analysis of the “dirty dozen” list found that substitution of organic produce for conventional did not result in a reduction of risk.

    • Decades of studies show plant rich diets improve health and prevent diseases. These studies were largely conducted using non-organic produce. 

    • If present at all, pesticide residues on produce are significantly below levels considered safe by health and regulatory agencies. 

    • The FDA (Food & Drug Administration) says washing produce under running tap water reduces and often eliminates pesticide residues if they are present on fresh produce. 

    Now, I’m not here to bash those who prefer to buy organic by any means. Frankly, I’m an EOPP (equal opportunity produce pusher) but want you to know the facts.

    What do I purchase in the Shaw Kitchen?

    I purchase what’s in season, which generally means what’s on sale. Sometimes it’s organic, sometimes it’s conventional, but all times there are both fruits and veggies in my cart.

    While there are certainly strong emotions surrounding this topic, I want to be as PC (politically correct) as possible and just give you the facts, not fears, in the research.

    For those who don’t know, Mr. CEO grew up on a farm that has been in the Shaw family for over 100 years.

    When I think of my father-in-law and the strong work ethic he has, I never question the safety of his practices.

    If you know farmers, more often than not, they’re good people.

    Heck, when you think about it, the first consumers of their harvest are their own families, so if anything, that should settle your mind, right?!

    Last, but certainly not least, I want to talk about the amazing farms I got to see.

    Did you know that the Salinas Valley in California is known as “the salad bowl” and makes up over 97% of the production of leaf lettuce, strawberries, head lettuce and broccoli?

    This is largely due to the location with Central California’s coastal temperatures and nutrient rich soil. Gosh, as if I needed another reason to love California!

    • To prepare gravy, place 4-quart stovetop pot over medium heat. Stir butter until melted, mixing in spices after about 1 minute.
    • Slowly whisk in flour and begin to pour in milk, 1/4 cup at a time. Continue to stir over medium to low heat for about 5 to 7 minutes. Add in sprigs of rosemary and turn heat to low, cover and set timer for 10 minutes.
    • Before serving (or storing), remove rosemary sprigs.
    • Serve over hash browns, biscuits or favorite cooked veggies and top with eggs!
    • Enjoy!

    Gravy will keep in an air tight container in the fridge for up to 5 days.

    In honor of the month, I’ve joined forces with fellow dietitians under the leadership of Mama Chef Pro Sara Haas RDN to show the nation just how important it is to get in the kitchen with your little ones.

    I live vicariously through my friends and family as they teach their young ones the skills every pro home cook needs to know and have enlisted them to kindly donate photos of them in action!

    We’ve got to start by reading those recipes (like these ADORABLE no bake skewers) right? Kids can practice new words and you can get this 1-1 time with them at an early age to help cultivate learning. This even starts in the store! Take them to the market and let them begin to read and recognize the colors and ingredients that go into those “cookies” or “salads“!

    You know those little notebooks or pads of paper that keep piling up from hotels or the $1 spot at Target? Don’t recycle them! Give them to your kiddos so they have their own “recipe book”. Let them draw, color, and create they’re own recipes. You never know, they may just be on to the next culinary breakthrough in your kitchen!

    Yep, Baby Einstein over here! Asking and showing your kids that one egg or two cups of oats goes into a recipe is a great way to reinforce learning! Don’t just stop there though. Let them measure, chop and pour too!

    Grapes are purple, lettuce is green, and beets make an amazing red food coloring! Expose your tykes to the colors and let them see how amazing and beautiful good food is!     Still learning here myself, but after placing those muffins into the oven for 18 minutes or so, that will likely be the longest 18 minutes of their day! Show them during this time how you can “multitask” and keep them occupied with helping you clean up. Two extra hands in the kitchen to dry, yes please!

    To me, this is the MOST IMPORTANT SKILL you can gain in any kitchen. I like to think of it as the greatest tool to #simpleswap success. Let kids get creative help them recognize you can sometimes veer off a recipe using ingredients you have on hand that may also even end up amping the nutrition too! For instance, try using that zucchini in place of some of the butter in your Chocolate Cake! It will really show kids just how WILD their parents are and may even get them to try something they may not have before.

    I’m not going to lie, I’m somewhat loving these check-ins!

    It’s like an online diary I get to share with my favorite people, so thank you for being so loyal and following along!

    Wanted to share how I spent the last few days solo while Mr. CEO was at work.

    Everyone needs a Little Me Time, right?

    But first, some fun facts! 

    ♦ Smoking is like sunscreen here! 

    I’m not sure I will ever get used to this part. Is it just America who recognizes #smokekills?

    ♦ Water is not free. 

    So much for hitting my 8 cups a day! Well, at least not during dinner. I’ve taken to purchasing my   bottle early in the AM so I can bring it with me as I explore!

    ♦ Food is EXPENSIVE! 

    I am one thrifty lady at the market, you and I both know that. But, boy oh boy, the cost of goods here feels astronomical! ONE granola bar for $3.59 USA… oye vey!

    Alright, enough of that, here’s what I’ve been up to!

    Monday

    Slept a little less than 4 hours so felt very run down. Opted for a slow jog to the next town when Mr. CEO left for work and an even slower walk home.

    I came back to get some work done, eat some lunch and then headed out to get some energy! On my way, I saw a goose and a dog fighting tooth and nail… sadly, the goose one. A Little Me Time In Ticino - How I Spent The Last Two Days! @shawsimpleswaps

    I window shopped for a total of 20 minutes (I’m not a shopper) and ended at the grocery store (go figure) to wander the aisles and think about what recipes I could come up with next time I’m out here.

    I wasn’t ready to go back to our room, so instead sought out to find a bike!

    Our Aparthotel manager was so kind to let me borrow one of his (or the one he said that’s been out front for three weeks) and off I went. Found a super cool rollerblading crew, if only I could find where to rent them!

    Mr. CEO got home around 7 PM (he leaves about 7 AM) and had a meeting with California, so I got hangry and made us dinner here. It turned out to be a good thing because a crazy storm hit that knocked off a branch on the tree in front of our place that caused the police to shut down the road!

    Tuesday

    Unfortunately, I woke at 3AM and really was dragging. I decided to go for a walk around 515 AM to see what was open. And, surprise surprise, nothing but a gas station! The bakeries don’t even open up until 730AM, so I stopped and grabbed a water and some nectarines (they are like candy out here) and headed back to make Mr. CEO breakfast before he left.

    I did some work then headed out for a quick run. It gave me the burst of energy I needed so I came back, showered, and decided to take the train to Lugano to have lunch.

    After lunch, I strolled around Lugano and then made the trek back up the hill to catch the train. 24,000 steps clocked in at just about 2PM, I’m whipped!

    I window watched on the train on the ride back, but then almost fell asleep and missed the transition train stop! I choose to read the last leg so I didn’t end up in Italy!

    Another side note, I’m fascinated with the microbiome as you know and am loving this new read. So worth it!

    Anyways, I came back about 3PM to do some laundry and catch up on work. Waiting for Mr. CEO to finish up his California calls with work so we can enjoy our first meal out together, I’m hoping for pizza!

    I plan to work tomorrow and hopefully go for another hike or run, but pretty low key since we leave bright and early Thursday for our vacation! I can’t wait!
