85 Vegetarian Recipes To Make Meal Prep Easy!
DYK October marks National Vegetarian Awareness Month?
While I’m not a vegetarian, I do eat a majority of plant based ingredients in my daily diet.
Truthfully, I don’t eat this way because it’s “healthier” or “better for the environment” (though both of those are excellent reasons too!), but rather because it makes me feel my best and gives my body the most fuel to energize my day.
Going “vegetarian” does not have to be as black and white as was once thought.
You can start small even beginning with something like Meatless Monday (more on that here), and gradually work your way up to making that plant based ingredient the “center of the plate” while incorporating your animal based protein as a garnish or side item.
And trust me, you can get any meat and potato lover on board with this style of eating! Mr. CEO, born and raised on the cattle from the farm, didn’t go a day without meat when I first met him.
I’m not kidding when I say he came home last week and polished off a new Lentil Cauliflower Sloppy Joe recipe I’ve been working on. Truth be told, he probably eats vegetarian (with the inclusion of dairy and eggs) 4 to 5 days a week now!
No, I didn’t force him to either! He has gladly embraced the plant forward way of eating in our house because of one key component I’d never swap— FLAVOR!
IMHO (in my humble opinion), I believe that the best way to turn old classics into your favorite vegetarian dishes starts with the flavor profile. If you can jazz up your lasagna using mushrooms as a flavor enhancer to give that rich, umami taste you often find in meat based dishes you’d be surprised how much you won’t miss the actual meat.
