HAPPY NEW YEAR!!!
WOW, it’s amazing how quickly the last year has flown by. With one year of blogging under my belt, I can assure you I am by no means an expert (as I am sure you are well aware!). But, I can tell you I have learned a TON and will continue to grow Simple Swaps to make it a reliable and useful resource for you!
I figured in true Simple Swaps fashion I would bring to you a take on last years Light & Fluffy Pancakes since the hubby has been hinting for a week now pancakes need to enter the Shaw kitchen stat! Well Wayne, what the hubby wants, the hubby gets… or at least today!
I must admit, I was going to provide you with an AMAZING dairy free, extra fluffy and low calorie almond pancake recipe, but #realtalk, this recipe was for my mouth only. Let’s just say the “extra fluffy” turned into a mushy banana stack. But, since I can’t throw out food, again PB2 was there for the rescue!
Despite the fail on the almond pancakes, I did manage to pull off a winner with these Brown Sugar Pancakes! Plus, they can easily be made dairy free by subbing the skim milk for an almond or soy variety.
Brown Sugar Pancakes
- 2 cups all purpose flour
- 2 cups milk of choice
- 2 tbsp brown sugar
- 4 tsp baking powder
- 2 tsp vanilla
- 1/2 tsp cinnamon
- Mix flour, baking soda, brown sugar and cinnamon together.
- Slowly stir in vanilla and milk.
- Heat griddle to medium heat.
- With a 2 oz ladle, spread pancake batter on griddle.
- Once bubbles form, flip pancake.
- Drizzle with syrup and serve with fresh fruit and a cup of your favorite joe!
