Guacamole, Tacos, Eggs Benedict, BLT’s, Chocolate Mousse… the list could go on for days! Considering how versatile the fabulous AVOCADO is, it’s no wonder the average person consumes over five pounds of this fruit each year.
Avocados not only provide great texture and flavor to your recipes, but they also pack a powerful punch of nutrition. Fresh avocados act as “boosters” that help your body absorb fat-soluble nutrients, like beta-carotene and lutein, found in foods like carrots, tomatoes, spinach and lettuce. Using a fresh avocado dressing will actually increase the nutrient density (aka benefits) of that salad as a whole.
|Summer Salad w/ Avocado Cilantro Dressing|
- 1 small ripe avocado
- 1 bunch of cilantro
- 1/2 cup plain, fat-free Greek yogurt
- 1 clove of garlic, chopped
- 1 tbsp. lime juice
- dash of sea salt
- In a food processor, combine all ingredients and pulse until smooth.
- 20 Calories; 2 gm fat; <30 mg sodium; 1 gm sugar, 2 grams fiber
