Easyto assemble, packed with a variety of seasonal produce, and filled with nutrient-beef,this Beef Burger Board has something for everyone with gluten- and dairy-freechoices included.
Turn on BBQ grill (or indoor grill pan) with burners set to medium-high heat.Portion 1-pound lean Ground Beef into patties, approximately 3-ounce each. Season each side of the patty with salt and pepper. Set aside.
Prepare produce by rinsing with cool water, patting dry with paper towels, then brushing corn, bell peppers, mushrooms, pineapple rings, onion slices, and artichoke hearts with olive oil. Season with salt and pepper. Place desired condiments in portion cups and set aside.
Place burger patties on one section of heated grill, then produce on the other. Cover and let the patties cook 4 to 5 minutes, then flip, and cook another 4 to 5minutes. The final internal temperature of the burger should read 160 degrees F. If a cheeseburger is desired, place 1/2-ounce of cheese on a patty 30 seconds before removing to allow it to melt(carry over cooking will also help with this as well.)
Rotate the vegetables and fruits as well. For reference, the corn and artichoke hearts will take about 10 minutes to cook, the bell peppers, mushrooms, onion and avocado will take about 8 minutes, and the pineapple rings about 4 to 5minutes. Adjust the burners if you notice one section is getting hotter than another to evenly cook all the produce at one time. You can also pull off the avocado or other produce item when your preferred degree of doneness is met.
Once items are grilled, begin to assemble the burger board tray. Start by placing the condiment cups in a serving tray with rimmed sides. Start by placing a paper towel under the grilled items to help absorb excess moisture. Then, begin to build the board by placing the uncooked produce on one side, then the cooked produce on the other (this will help to prevent the lettuce wilting or the tomatoes from becoming slimy from the grilled veggies expelling some of their water content.) Add in the buns and additional produce picks to volumize with more veggies and fruits.
Once board is assembled, open up the serving line and let your guests build-their-own-burgers! See recipe notes below for suggested pairings.

Storage:Burger patties can be stored in the fridge in an airtight container for up to 3 to 4 days. The grilled produce is best eaten day of, but it may hold in the fridge in an airtight container for 1 to 2 days. Fresh produce and fruits not consumed will keep in the fridge for 3 to 4 days.
