Forget the store bought enchiladas laden with preservatives and trans fat! These babies are sure to please even the pickiest eater!

8ozcooked ground turkey85% > lean
6whole wheat tortillas
4cupsof Spicy Mexican Simmer Sauce
2cupsBell Pepper Black Bean Dip
4ozshredded reduced fat cheddar cheese
Preheat oven to 350*F and spray an 8" x 11" casserole pan with cooking spray.
Saute ground turkey with onion and spices.
Pour 1/2 cup of Spicy Mexican Simmer Sauce in base of pan.
Assemble the enchilada by first layering the tortilla with 2 tablespoons of black bean dip.
Next, place the ground turkey onto the bean dip.
Ladle a few teaspoons of enchilada sauce over the turkey and sprinkle a teaspoon of cheese on top.
Roll tortilla up and place in the pan.
Continue until all tortillas and ingredients used.
Pour remaining enchilada sauce over tortillas and top with the rest of cheese.
Bake for 35 minutes and then let cool before cutting!
