ripe avocado

hard boiled eggs
peeled and finely chopped

white wine vinegar

mustard

Instructions
Mash avocado in a large bowl. Add in the eggs, vinegar, mustard, onion, pepper and salt.
Mix until well combined.
Serve as desired: in a sandwich, over a bed of lettuce, or with your favorite crackers or veggies!
Salad will keep in an air tight container in the refrigerator for up to 3 days.
