Ingredients

medium sweet potato
washed, skin on, cubed

can diced tomatoes
no salt added

medium onion
finely chopped

green bell pepper

drained and rinsed

Instructions
Take out slow cooker and plugin to an outlet.
Combine all the above ingredients into your slow cooker.
Set on low and let simmer for 4-6 hours.
