If you like a good cookie but aren't a fan of the baking process (read lots of bowls, measuring cups and endless dishes), then these Chocolate Walnut Rugalach Cookies are for you!
1eachwhole grain pie crustraw, prepared from scratch or store bought
2tablespoonsbrown sugar
1/3cupwalnutschopped
1/4cupchocolate chipsmini
1 tablespoonpowdered sugar
Instructions
Preheat oven to 425 degrees F. Spray a baking sheet with cooking spray and set aside.
Sprinkle flour on a flat surface (preferably a marble or granite area). Roll out pie crust so its a flat, large circle.
Starting from the outer edges in, sprinkle brown sugar, walnuts and chocolate chips. Using the back side of a fork, press the sugar, walnuts and chocolate chips into the pie crust.
Take a pizza cutter (or sharp knife) and cut the circle in half, then into fourths, repeating until you have 16 "slices".
Start at the outer edge of one slice and tightly roll the dough in towards the center, gently pressing the tip of the last piece of dough onto the cookie so the sugar, walnut and chocolate mixture stays nestled inside.
Repeat above step for all remaining 15 cookies to be assembled. Place on the baking sheet and cook for 12 minutes.
Remove and let cool. Sprinkle with powdered sugar, enjoy!
Notes
Can be made gluten free by using a gluten free flour and gluten free pie crust.
