“My, my, oh me, oh my, I love pie!” NAME THAT MOVIE?
Any guesses? Alright, I know it wasn’t a Blockbuster or anything but it sure is a family favorite… Michael! Remember… it’s that movie when John Travolta played the human angel with HUGE wings and he lived off sugar :).
Anyways, the reason that little jingle popped into my mind was because this month’s Recipe ReDux challenge is titled “Pie Love”! I love a delicious pie just as much as the next person. Nothing compares to the smell that envelops your house when a fresh apple pie begins to caramelize in your oven. Can’t you just smell it right now… yum-my!
As much as I love spending hours in my kitchen baking God knows what, I find it harder and harder to turn on the oven when the San Diego sun is beaming down and my beautiful deck chair is calling my name! Thus, sun tanning (hey-I’m getting some natural vitamin D :)) somehow always seems to win these days.
After basking in the sun all afternoon the last thing I want is a slice of warm apple pie a la mode. Something crisp, refreshing, light and fruity sounds pretty darn good though, right?! So, what’s a woman to do when she craves a sweet treat from the beloved pie family but doesn’t want to spend hours in the kitchen? Enter… the newest addition to the #simpleswap recipe arsenal… Vanilla Banana Blueberry Frozen Pie Pops!
For those moms out there, this one’s for you. It’s probably the easiest thing since sliced bread. No, but really, it is! All you need are bananas, fresh fruit (I chose blueberries and nectarines) and vanilla pudding. Compared to the frozen pops in the markets, these babies are full of antioxidants, nutrients and calcium; plus, they’re made from all natural sugar sources!
You’re kids will think you’re mom of the year, other moms will envy you, and you’ll thank yourself when you pop one or two of these babies into your mouth without destroying your summer beach bod :)!
Vanilla Banana Blueberry Frozen Pie Pops
Ingredients
- 1 package instant vanilla pudding *I used sugar free
- 1 1/2 cups milk *I used vanilla unsweetened almond milk
- 1 large banana sliced into quarter size bites
- 1 cup berries
- 1 small nectarine chopped
Instructions
- Make pudding according to package instructions.
- Line mini and regular muffin tins with saran wrap.
- Place banana quarters on bottom of muffin tin.
- Fill muffin tin with vanilla pudding mixture.
- Top with berries and fresh chopped nectarines.
- Freeze for 2+hours and enjoy!
