Ever have one of those
days weeks where you have all these great intentions to prepare a nice, homemade meal and then BAM, dinner has come and gone and your left eating a bowl of cereal and dry toast? Well folks, for those of you who answered “no”, you are in fact a superhero! For those who answered with a big “hell yes”, then I encourage you to read on to meet my new best friend…A.K.A. the Crock-Pot.

Rather than spend your hard earned money at the closest quick-service joint (or the delivery fee for a pizza), I suggest you invest in a Simple-Swap approved Crock-Pot. You can pick one up for under $15 easily with a coupon, and trust me, it is well worth it!
After purchasing your Crock-Pot, you will be amazed by the variety of HEALTHY meals you can create with it! Really, it is as simple as deciding on a few solid menu items you want to prepare during the week. When you shop over the weekend, pick up the staples you need to have on hand to toss in the Crock-Pot before you leave and set to low. Be as creative as you want with the ingredients, they will all simmer together in a beautiful way to create a unique supper. By the time you get home, not only does your house smell GLORIOUS but you also have a meal ready to serve!
Some of my favorite Crock-Pot recipes are Garlic Shredded Chicken, Sweetie Soup, and my husbands favorite (though not as healthy), Potato Cheese Stew. What exactly is “Sweetie Soup”? It’s my latest invention using a few Simple-Swaps I found in my produce drawers and cabinets.
Last night in the Shaw household was one of those great intentions night that turned into a breakfast for dinner option instead. I vowed to the hubby that he would come home tomorrow to a Sweetie Soup however had no desire to go to the store. Thus, the can of black beans, large sweet potato, onions, bell peppers, carrots, garlic and array of seasonings were put to the test.
Sure enough, success was achieved! I got home a bit before him and the aroma of fresh garlic and seasoned paprika filled the air that I had to do a little taste testing. CAUTION: Do not become too enthused by your success that you forget to blow on your spoon…it will result in the burning of your mouth!
Needless to say, the Sweetie Soup was a hit and the Crock-Pot again lived up to its name. If you aren’t necessarily sure what you want, but have a protein on hand, go ahead and throw it in the Crock-Pot with some broth and herbs. Whatever your appetite desires by the time you get home, you have a nice solid base to start with and can easily throw it over a salad, wrap it in a burrito, or top a potato with it to create a healthy simple supper!
